3-4lb Boneless Chuck Roast
2 Onions
6 Potatoes
Carrots
Vegetable Oil
Garlic (Fresh or Minced)
Water
1 (16oz) can Plum Tomatoes
Italian Seasoning
Beef Broth
Bay Leaves
Frozen Peas (or Green Beans)
Flour
Salt & Pepper to taste
Savory Pot Roast
3-4lb Boneless Chuck Roast
1 Onion (cut into wedges)
3 Potatoes (cubed)
2 Carrots (sliced)
Vegetable Oil
2 tsp Garlic (Fresh or Minced)
1 cup Beef Broth
1 tsp Sweet Basil
Salt & Pepper to taste
Turn your crock-pot on low, and drizzle about 1 tablespoon of vegetable oil in the bottom. Place the roast in the pot, and nestle the chopped onion, potatoes, carrots, and diced garlic all around it. Pour in 1 cup of beef broth, and sprinkle the seasonings on top (1 tsp Sweet Basil and Salt & Pepper to taste). Cover the pot, and let it cook on low for 9-10 hours.
Vegetable Beef Stew
Leftover Pot Roast (cubed into bite-sized pieces)
1 Onion (chopped)
3 Potatoes (cubed)
2 Carrots (sliced)
2 tsp Garlic (Fresh or Minced)
1 (16oz) can Plum Tomatoes
1 tsp Italian Seasoning
2 ¾ cups Beef Broth
1 Bay Leaf
½ cup Frozen Peas (or Green Beans)
¼ cup of Flour
Salt & Pepper to taste
Dump the canned tomatoes (juice and all) into the crock-pot and crush them with the back of a spoon. Add the onions, potatoes, carrots, and garlic into the pot. Sprinkle with Italian seasoning, and add in the beef (along with any drippings/broth from last night’s meal). Pour in 2½ cups of beef broth, stir mixture together, and cook on low for 8-10 hours. Add in the peas (or green beans), and salt & pepper the stew to taste. About 20 minutes before you’re ready to eat, mix together ¼ cup of beef broth with ¼ cup of flower until the mixture is the consistency of a smooth paste. Stir the mixture into the stew, replace the cover, and continue to cook for 15 more minutes. Remember to remove the bay leaf before dishing yourself up a bowl! – Enjoy!
