Check out the delicious meal one trucker’s wife made in the cab of the truck. With a Crockpot, Magic Bullet, and an electric skillet, you,too, could have a mouth-watering dinner of eggplant parmesan with Italian sausage.
Be reminded however, that meals like this can be healthy as long as you watch your portions. You can also make other substitutions to make the dinner even healthier, such as Italian sausage made from turkey meat.
You could also mix in more breadcrumbs instead of flour and cheese for the breading. And as always, using olive oil or canola oil as a substitute for regular cooking oil is a great step too.
