Recipe: Slow Cooker Quesadilla Casserole

Cooking In The Cab Who doesn’t like a hearty meal after a long day of work, but who wants to cook a big meal after said long day?  This easy crockpot meal will be sure to leave you full and satisfy your craving for a south of the border flavor.

I like slow cooker meals that are easy, all the ingredients thrown in together, no premixing or adding later.  I also like slow cooker meals that are complete.  I don’t want to have to make sides to go with my slow cooker meal.

The recipe takes about 20 minutes to put together.  If you’re using raw meat, it will need to cook on low for 8-10 hours total; however, if you’re using pre-cooked chicken, 3 hours in the slow cooker should do it.

Please read the entire recipe before you get started.  You will need to place the mixture into a baking pan and then place the baking pan into the crockpot, so you’ll need to make sure you have one that will fit inside of your crockpot.

Make clean up a breeze, use slow cooker liners.  When you’re finished with your meal, simply pull out the liner bag and toss it in the trash.

 Ingredients:

  • 2 Tablespoons of Chili Powder- If you use taco seasoning, you don’t need to add additional seasoning
  • 1 Teaspoon of Ground Cumin
  • 1 Tablespoon of Minced Garlic
  • 1/2 Teaspoon of Oregano Leaves
  • 1/2 Teaspoon of Crushed Red Pepper
  • 1 Pound of Ground Beef (you can buy precooked hamburger) or 4 to 6 chicken breasts (raw or rotisserie)
  • 1 Onion, chopped
  • 1 (8 oz) Can of Corn, drained
  • 1 Can of Rotel
  • 1 Can of Chili Beans
  • 1 Cup of Picante Sauce
  • 6 Flour Tortillas
  • 2 Cups of Shredded Cheese
Optional Add-ins/Ons:
Green onions
Tomatoes
Spanish rice
Salsa
Sour Cream
Guacamole
Cut all ingredients in half, if you want to make 2-4 servings.

Directions

  1. Step One

    Brown ground beef and drain.

  2. Step Two

    Add everything else, except tortillas and cheese. Mix well and heat thoroughly.

  3. Step Three

    Spoon 1/4 of mixture into bottom of slow cooker. Place 2 tortillas on top.

  4. Step Four

    2nd layer….1/4 mixture, large handful of cheese, tortillas. Repeat for 3rd layer. Top with remaining sauce and cheese.

  5. Step Five

    Place lid on slow cooker and heat on low for 3 hrs. if you’re using pre-cooked meat. If you’re using raw meat, all ingredients except tortillas and cheese, and cook for 5 hours, then add tortillas and cheese, cover and cook for 1-2 hours.

    Spoon the casserole over tortillas or tortilla chips, add your favorite garnishes and enjoy!
