Joe Cross is a film maker who is very interested in food and health. He’s fascinated with the American diet, in particular, and why it proves so troublesome to our wallets and our waistlines.

So he came to America to speak with people about food, wanting to know what they eat and if they thought they were healthy. He noticed something strange – most people didn’t try and create a healthier diet until they crossed a threshold of bodily danger. Cross sympathized, because that’s what happened to him before he decided it was time to re-arrange his diet to save his life, due to an auto-immune disease diagnosis.

While talking to some people at a truck stop in Arizona, Joe meets a truck driver who suffers from the same rare auto-immune disease. Phil Staples is morbidly obese weighing in at 429 lbs. As Joe is recovering his health, Phil begins his own epic journey to get well. What emerges is nothing short of amazing – an inspiring tale of healing and human connection.
