Being on the road and exposed to fast food and truck stop food, my expenses had really gotten out of control and so did my weight.
Once I started trucking, I had 110 pounds on my bones and ended up with 185 pounds, plus a lot of allergies due to the fast food. My joints, my knees started to hurt and my back was acting up.
I was healthy my whole life, never had any problems and all of a sudden everything seemed to come together. I started paying attention and realized it was the unhealthy food on the road, not to mention eating out of the truck, that really pulls out your money out of your pockets.
Something had to change, and quickly. I didn’t want to continue like this and I didn’t want to accept food making me and my body sick.
I went and got a griddle, a burner with 2 hot plates and a microwave. Some plates, cutting board, knifes and forks and spoon and started getting my own groceries.
I also started working out in my truck and out of the truck, very quickly I saw the result and the weight just dropped of me again.
Cooking in the truck has helped me to run a grocery budget “including dog food and laundry detergent and coffee, of $120 for 2 weeks for 2 people! This is a budget of $60 per person, per week for breakfast, lunch, dinner, snacks and drinks and coffee. Try to beat that on truck stop food!
Many friends inspired me to open up my own facebook page or even run youtube videos, after they saw my delicious meals on facebook. They couldn’t believe it could be done in a truck. But it can be done!
From pasta chicken al fredo, spaghetti and meat balls, salads, pizza, borritos, soups or even paella !
