I made this fast and easy bean dip for a 4th of July fireworks and family  barbecue and it was a big hit, so I thought I’d share it with you! This recipe will make a large portion, so you may want to cut it in half.
Ingredients:
- Â 2 cans of Ro-Tel with cilantro and lime (NOT drained)
- 1 can of corn (drained) *You can use Mexican corn, if you want to.
- 2 cans of black beans (drained)
- 1 cup of chopped peppers
- 1 cup of chopped onions
- 1 can of green chilies
- 2 tsp garlic
- 2 tsp red pepper
*For a little more kick, substitute the cilantro-lime Ro-Tel for Hot Ro-Tel, add 1 TSP of lime juice and 1/2 a cup of chopped cilantro.
Directions:
Drain the juice from all the cans, except the Rotel. Â Chop the onions and peppers and pour in large bowl. Â Pour all the canned ingredients in, add seasonings and stir. Â It’s that easy!
Eat it with chips or pour it over a taco salad and enjoy.
