Recipe: Delicious Black Bean, Salsa Dip

I made this fast and easy bean dip for a 4th of July fireworks and family  barbecue and it was a big hit, so I thought I’d share it with you! This recipe will make a large portion, so you may want to cut it in half.

Ingredients:

  •  2 cans of Ro-Tel with cilantro and lime (NOT drained)
  • 1 can of corn (drained) *You can use Mexican corn, if you want to.
  • 2 cans of black beans (drained)
  • 1 cup of chopped peppers
  • 1 cup of chopped onions
  • 1 can of green chilies
  • 2 tsp garlic
  • 2 tsp red pepper

*For a little more kick, substitute the cilantro-lime Ro-Tel for Hot Ro-Tel, add 1 TSP of lime juice and 1/2 a cup of chopped cilantro.

Directions:

Drain the juice from all the cans, except the Rotel.  Chop the onions and peppers and pour in large bowl.  Pour all the canned ingredients in, add seasonings and stir.  It’s that easy!

Eat it with chips or pour it over a taco salad and enjoy.
