Indian food is rich, fragrant and fantastic and not always easy to find at a truck stop. Â Here’s an easy recipe you can make in your slow cooker.
Ingredients:
2 Tbsp butter
2 Tbsp peanut or sesame oil
3 large chicken breasts or thighs (you can use pre-cooked chicken if necessary)
1 diced white onion
3 cloves or 1 1/2 Tbsp garlic powder (not garlic salt)
2 tsp. curry powder
1 1/2 Tbsp curry paste (Green or red)
3 tsp of tandoori masala (or a mixture of ginger, garlic, red pepper, paprika and cumin)
1 Small can of tomato paste
3 tsp of cardamom
1 tsp ginger
1 can of coconut milk
1 1/2 cup of plain, greek yogurtÂ
Directions:
Warm the butter and oil in the bottom of the slow cooker. Â Mix together and then add chicken, onion and spices. Â Heat until onions have lost their color. Â Stir in tomato paste. Â Add coconut milk and greek yogurt.
Cook on high for 4-6 hours.
Pour over Jasmine rice.
