Recipe: Indian, Buttered Chicken

Indian food is rich, fragrant and fantastic and not always easy to find at a truck stop.  Here’s an easy recipe you can make in your slow cooker.

Ingredients:

2 Tbsp butter

2 Tbsp peanut or sesame oil

3 large chicken breasts or thighs (you can use pre-cooked chicken if necessary)

1 diced white onion

3 cloves or 1 1/2 Tbsp garlic powder (not garlic salt)

2 tsp. curry powder

1 1/2 Tbsp curry paste (Green or red)

3 tsp of tandoori masala (or a mixture of ginger, garlic, red pepper, paprika and cumin)

1 Small can of tomato paste

3 tsp of cardamom

1 tsp ginger

1 can of coconut milk

1 1/2 cup of plain, greek yogurt 

Directions:

Warm the butter and oil in the bottom of the slow cooker.  Mix together and then add chicken, onion and spices.  Heat until onions have lost their color.  Stir in tomato paste.  Add coconut milk and greek yogurt.

Cook on high for 4-6 hours.

Pour over Jasmine rice.
