My family loves breakfast burritos. Â We love them so much, we often have them for dinner. Â Breakfast burritos are a great way to add lots of protein and veggies to your morning meals. Â The other great thing about breakfast burritos is that they can be made ahead, wrapped individually and frozen. Â Take them on the road, and pop them in the microwave for breakfast or dinner.
Ingredients:
1 Dozen Eggs
24 Burrito-Sized Tortillas
2 Cups Chopped, Sweet Peppers
1/2 Cup Chopped Green Onion
1 lb. Center-Cut Bacon
3/4 Cup Shredded Cheddar Cheese
1/4 Cup Milk
1 TBSP oil
Healthy Substitutions:
Egg Beaters Egg Whites
2% Cheese
Turkey Bacon
Directions:
Chop up sweet peppers and onions. Â Cook bacon and drain grease. Â Saute peppers and onions in oil. Â Crack and whisk eggs. Â Add milk and continue whisking until ingredients are well blended.
Add eggs to pan of peppers and onions. Â Scramble eggs.
Add 2-3 TBSP egg mixture to tortilla, add 1 slice of bacon and sprinkle cheese. Â Roll up tortilla, then wrap the burrito in Saran Wrap.
