I love chili and I love Mexican food, so this soup was an instant hit the first time I tried it. Best of all, this recipe is super easy to make, it’s delicious and it’s good for you!
Ingredients:
2 Cans Black Beans (Do NOT drain)
2 Cans Chili Beans (Do NOT drain)
1 Can Dark Red Kidney Beans (Do NOT drain)
2 Small cans of Mexican corn
1 Can of Hot Rotel
1 Can of Mexican diced tomatoes
1 small can of diced green chilies
1/2 Jar or 8 ounces of salsa or picante sauce
4 oz. Cream Cheese
1 lb. ground turkey or lean ground beef
2 tsp. cumin
2 tsp. red pepper
Directions:
Brown meat in bottom of crockpot with about a 1/2 cup to cup of water or brown meat in frying pan or electric skillet drain and add seasoning. Pour in cans of beans, Rotel, tomatoes, corn, chilies and salsa. Cook on low for 2 hours. Cube cream cheese and add to mixture. Cook on low for 2 more hours.
Garnish with tortilla chips, cheese, sour cream and avocado and enjoy!
