I love chili and I love Mexican food, so this soup was an instant hit the first time I tried it. Â Best of all, this recipe is super easy to make, it’s delicious and it’s good for you!
Ingredients:
2 Cans Black Beans (Do NOT drain)
2 Cans Chili Beans (Do NOT drain)
1 Can Dark Red Kidney Beans (Do NOT drain)
2 Small cans of Mexican corn
1 Can of Hot Rotel
1 Can of Mexican diced tomatoes
1 small can of diced green chilies
1/2 Jar or 8 ounces of salsa or picante sauce
4 oz. Cream Cheese
1 lb. ground turkey or lean ground beef
2 tsp. cumin
2 tsp. red pepper
Directions:
Brown meat in bottom of crockpot with about a 1/2 cup to cup of water or brown meat in frying pan or electric skillet drain and add seasoning. Â Pour in cans of beans, Rotel, tomatoes, corn, chilies and salsa. Cook on low for 2 hours. Â Cube cream cheese and add to mixture. Cook on low for 2 more hours.
Garnish with tortilla chips, cheese, sour cream and avocado and enjoy!
