Recipe: Spicy Corn Chowder

Nothing can warm you up on a cold day like a hot and hearty bowl of soup.  I love soup and I love spicy, so spicy corn chowder is one of my go-to winter meals.

Ingredients:

1 Bag of Frozen Corn

2 small cans of diced green chilies

1 large box of chicken broth

1/2 onion (diced)

1/2 lb of bacon (You can use the microwave kind)

2 Cups of colby-jack cheese

2 Cups half-and-half

2 tsp. red pepper

4 large potatoes, peeled and diced

1 cup of green onions

Directions:

Peel and dice potatoes.  Boil diced potatoes in 3 cups of water and cook until the potatoes have boiled down.  Pour in chicken broth.  Add corn, chilies, spices and onion.  Bring to a boil.  Add half-and-half.  Simmer on low for 30-45 minutes.

Garnish with bacon, cheese and green onions.
