Recipe: Sweet And Spicy Cucumber Salad


This is a fun twist on traditional cucumber salad.

This recipe has been adapted from Cooking Light magazine.

Ingredients:Cucumber Salad

2 cucumbers (peeled and sliced)

1/2 white onion diced

2 tsp. salt

1/2 cup rice vinegar

1/2 cup water

3 Tbsp sugar

1/2 tsp of crushed or powdered red pepper

1 Tbsp chopped peanuts *optional


1. Was, slice and salt cucumbers.  Pat the cucumbers dry.

2. Combine water, sugar, vinegar and red pepper in a pan.  Heat the mixture to a boil for approximately 10 minutes.  Remove from heat and allow to cool to room temperature.

3. Slice onions.

4. Add cucumbers and onions to liquid and toss.

5. Refrigerate for 2 hours.
