If you’re looking for a delicious, bite-sized snack you can make ahead and take with you on the road, give these recipes a try.
Pinwheels can be made before you go on the road, stored in a Ziplock baggie and snacked on for 3-5 days.
Here are two of my favorite pinwheel recipes:
Southwest Pinwheels-
Ingredients:
1 packages of tortillas
1 bag of taco cheese
1/2 bag of cheddar jack cheese
1 packages of softened cream cheese
1 small can of diced chilies
1 small can of olives
1 packet of taco seasoning
1/4 of a small tub of sour cream
1 packet of ranch dressing mix
1/2 cup of chopped jalapeños
1 tsp of cayenne pepper
Directions:
Mix all the ingredients in with an electric mixer, then spread the mixture over a tortilla. Roll it up, then wrap the rolled tortilla in plastic wrap. Repeat until mixture is gone. Refrigerate rolls for 2 hours. Uncover and slice.
Buffalo Chicken Pinwheels:
Ingredients:
1 packages of tortillas
1/2 bag of cheddar
1/2 bag of cheddar jack cheese
1 packages of softened cream cheese
1/2 cup of Frank’s Hot Sauce
1 can of chicken
1 packet of ranch dressing mix
Mix all the ingredients in with an electric mixer, then spread the mixture over a tortilla. Roll it up, then wrap the rolled tortilla in plastic wrap. Repeat until mixture is gone. Refrigerate rolls for 2 hours. Uncover and slice.
