Who doesn’t like a hearty meal after a long day of work, but who wants to cook a big meal after said long day? This easy crockpot meal will be sure to leave you full and satisfy your craving for a south of the border flavor.
I like slow cooker meals that are easy, all the ingredients thrown in together, no premixing or adding later. I also like slow cooker meals that are complete. I don’t want to have to make sides to go with my slow cooker meal.
The recipe takes about 20 minutes to put together. If you’re using raw meat, it will need to cook on low for 8-10 hours total; however, if you’re using pre-cooked chicken, 3 hours in the slow cooker should do it.

Make clean up a breeze, use slow cooker liners. When you’re finished with your meal, simply pull out the liner bag and toss it in the trash.
Brown ground beef and drain.
Add everything else, except tortillas and cheese. Mix well and heat thoroughly.
Spoon 1/4 of mixture into bottom of slow cooker. Place 2 tortillas on top.
2nd layer….1/4 mixture, large handful of cheese, tortillas. Repeat for 3rd layer. Top with remaining sauce and cheese.
Place lid on slow cooker and heat on low for 3 hrs. if you’re using pre-cooked meat. If you’re using raw meat, all ingredients except tortillas and cheese, and cook for 5 hours, then add tortillas and cheese, cover and cook for 1-2 hours.
Spoon the casserole over tortillas or tortilla chips, add your favorite garnishes and enjoy!
