This is a meal that can be made ahead, and taken on the road later!

Italian Sausage Lasagna

Ingredients:

  • 1 Package Hot Italian sausage
  • 1 Package Lasagna noodles
  • Traditional Ragu Spaghetti Sauce
  • 16 oz. Cottage cheese
  • 1 egg
  • Garlic Powder
  • Onion Powder
  • Italian Seasoning
  • Shredded Mozzarella Cheese
  • Shredded Sharp Cheddar Cheese

Directions:

  1. Preheat the oven to 350-degrees
  2. Cook Hot Italian Sausage in skillet. Season with garlic powder, onion powder, and Italian seasoning. Let meat rest once browned
  3. In another large pan, boil water. Once boiling, put all lasagna noodles in water. Try not to break them, this will make it easier to layer the lasagna later
  4. Strain noodles once soft. Set aside for later
  5. In cottage cheese container, combine cottage cheese, egg, and spices (garlic powder, onion powder, and Italian seasoning)
  6. In the pan used to cook the sausage, pour the cottage cheese mixture. Combine thoroughly
  7. Pour the desired amount of Ragu sauce in with the meat and cottage cheese. Make sure not to pour too much sauce, the lasagna will be runny
  8. Pour thin layer of Ragu sauce on the bottom of a 9 by 11 pan
  9. Lay down cooked/soft lasagna noodles in order to cover the bottom of the pan
  10. Sprinkle both shredded mozzarella and sharp cheddar cheese to cover noodles
  11. Cover layer of cheese with meat, cottage cheese, and sauce mixture
  12. Lay down another layer of noodles, and repeat the layering process until the pan is full
  13. On the last layer of noodles, put a generous amount of cheese
  14. Insert toothpicks sporadically throughout lasagna in order to prevent it from being crushed by foil
  15. Cover lasagna with foil

Bake covered lasagna at 350-degrees for 25 minutes

Uncover lasagna after 25 minutes, and cook for another 5-10 minutes – until top of lasagna is brown and crispy

Remove from the oven and let rest, then enjoy!
