5 slow cooker recipes to try this summer

Summer might be heating up but that doesn’t mean it’s time to put your slow cooker away. Making meals on your truck can be a fast, cheap and easy way to stay healthy throughout any season.

If you’re looking try something new, we’ve got 5 recipes sure to satisfy your taste buds.

  1. Slow Cooker Chicken Tacos

This video shows a super simple chicken taco recipe with only a few ingredients.

2.Italian Chicken and Potatoes

Ingredients:

  • 3-4 boneless, skinless chicken breasts
  • 4 potatoes, cubed
  • ½ cup Italian dressing
  • 1 tsp dried Italian dressing seasoning packet

Instructions:

  • Combine everything in your slow cooker
  • Cook on low for 6-8 hours

3. Meatballs and Ravioli

Ingredients:

  • 1 bag frozen meatballs
  • 1 bag frozen ravioli (or tortellini)
  • 2 jars pasta sauce
  • 2 cups of water

Instructions:

  • Combine all ingredients into slow cooker
  • Cook on low for 6-8 hours

4. Crockpot Pineapple Chicken

Check out this simple and fresh Hawaiian inspired recipe.

Ingredients:

  • 4 Chicken Breast
  • 1 Bottle of BBQ sauce, or homemade
  • 1 can crushed pineapple, drained
  • salt and pepper

Instructions

  • Combine ingredients in slow cooker
  • Cook on low for 6-8 hours

5. Slow Cooker Blueberry Crisp

If you’re craving something sweet check out this dessert recipe that’s perfect for summer nights.

Ingredients :

  • 16 oz frozen blueberries
  • 1 cup quick oats
  • 1/2 cup pecan pieces
  • 1/2 cup almond meal
  • 1/2 tsp. salt
  • 1/4 cup honey
  • 5 Tbs. butter softened

Instructions:

  • Spray the inside of the crock with cooking spray.
  • Place blueberries in the bottom of the crock (no need to thaw).
  • Stir together oats, pecans, almond meal.
  • Add honey and softened butter, using a fork to make crumbles.
  • Loosely crumble the topping over the blueberries.
  • Cover and cook on low 3-5 hours.
