Eating health on the road can be challenging, but the guy in this video shares an easy, inexpensive microwave meal recipe.

Many of the ingredients can be found at a local grocery store, or even on the buffet at a truck stop.

To prepare this meal you will need:

* 1 Box of barley * 1 Bell pepper * 2 Tomatoes * 2 Small cans of tomato sauce * 1 Bag of frozen stir-fry vegetables * 1 Bag of frozen butter beans * Some Chinese Spice – Sodium free * Frank’s hot sauce

Heat all the ingredients in the microwave, and voila’, you have a health meal. Enjoy!
